Chocolate Chai Cookies

Like most of us, I love a good Chocolate Chip cookie. There are so many different variations out there, it can be hard to choose which one you should make. I find that a lot of these recipes are too buttery with not enough flavor to back it up.
I really like the big flavors in this cookie. It’s a definitely a cookie for grown-ups. The Blackstrap Molasses and dark chocolate come through intensely. The boldness of the chocolate can be toned down by using a lower cocoa percentage chocolate.

Vegan Chocolate Chai Cookies
Cardamom, cinnamon and ginger are wonderfully fragrant spices. Combined with chocolate and the rich tang of molasses it is a guaranteed palate pleaser. Treat yourself and try these easy to make biscuits.
Ingredients
- 5 ml baking powder
- 310 ml all purpose flour
- 2 ml tsp salt and Sea Salt to sprinkle over the tops prior to baking
- 50 ml muscavado sugar
- 30 ml Chai spice mix
- 80 ml coconut oil
- 60 ml golden syrup
- 10 ml blackstrap molasses
- 15 ml flax meal
- 60 ml water.
- 200 g 95% Dark Chocolate chopped.
Instructions

Mix together the flaxmeal and water. It will resemble porridge.

Use a whisk and mix together all the dry ingredients.

Mix together the oil, molasses and golden syrup, add in the flax ‘porridge’ and finally combine with the dry ingredients and chocolate

Shape the dough into balls and flatten them before baking at 180 degrees Celcius for 12 minutes.
